As a researcher in the Department of Food Science, I work with an interdisciplinary team of six graduate students. With my background in Chemical Engineering and previous research experience in reaction kinetics and modeling, I aim to successfully tackle current problems in the area of rice storage, like the production of aflatoxin, a potent carcinogen, by mold. My strong passion to tackle issues central to sustainability and food security have driven me to select this topic in the hope that my research contributes to mitigating post-harvest losses. I am working to integrate biotechnology and engineering to elucidate the kinetics of fungal growth and mycotoxin development during grain drying and storage.
